Thanksgiving 2026 Planner: A Dated Countdown Checklist and Turkey Math
Thanksgiving is Thursday, Nov. 26, 2026. A dated countdown, turkey to buy at one pound per guest and oven times from the U.S. Department of Agriculture (USDA).
In this article
Thanksgiving Day in the United States is Thursday, Nov. 26, 2026, and the simplest rule for buying the bird is about one pound of turkey per guest. That figure comes from the U.S. Department of Agriculture (USDA) Food Safety and Inspection Service (FSIS). The plan below counts backward from dinner so each step lands on a real date, from the guest list this week to the last of the leftovers on Monday, Nov. 30.
The dates in the countdown are our suggestion for pacing the work. The food-safety facts, the turkey math and the cooking times are the USDA’s. For the full thaw table by weight, see our guide on when to thaw a Thanksgiving turkey. For parade and game times, see the Thanksgiving 2026 television schedule.
How much turkey to buy
The USDA says to allow about one pound of turkey per person, whether the bird is fresh or frozen. For a frozen pre-stuffed turkey, which goes in the oven without thawing, allow one and a quarter pounds per person. The agency advises against buying fresh pre-stuffed turkeys.
| Guests | Turkey weight at 1 lb each (USDA) | Frozen pre-stuffed at 1¼ lb each |
|---|---|---|
| 8 | 8 lb (3.6 kg) | 10 lb (4.5 kg) |
| 10 | 10 lb (4.5 kg) | 12.5 lb (5.7 kg) |
| 12 | 12 lb (5.4 kg) | 15 lb (6.8 kg) |
| 16 | 16 lb (7.3 kg) | 20 lb (9.1 kg) |
| 20 | 20 lb (9.1 kg) | 25 lb (11.3 kg) |
If you want generous leftovers, we suggest sizing up a little; that part is a cook’s choice, not a USDA rule. A frozen turkey keeps its best quality if cooked within a year, the agency says.
The countdown, week by week
Weeks before
- Week of Oct. 26: Settle the guest count and ask about allergies and diets. Everything else follows from the head count.
- Monday, Nov. 2: Plan the menu and, if you want a fresh turkey, reserve one now. These dates are our suggestion.
- Nov. 14 to 18: Buy a frozen turkey, at about one pound per guest, so there is time to thaw it. Keep it frozen until you start thawing.
Thanksgiving week
A frozen turkey thaws in the refrigerator at about 24 hours for every 4 to 5 pounds, the USDA says. Counting back from Thursday, Nov. 26, at the longer end of each range gives these fridge start dates:
| Turkey weight | Refrigerator thaw time (USDA) | In the fridge by |
|---|---|---|
| 4 to 12 lb | 1 to 3 days | Mon., Nov. 23 |
| 12 to 16 lb | 3 to 4 days | Sun., Nov. 22 |
| 16 to 20 lb | 4 to 5 days | Sat., Nov. 21 |
| 20 to 24 lb | 5 to 6 days | Fri., Nov. 20 |
The start dates are our arithmetic. A turkey thawed in the fridge keeps there 1 to 2 more days, so finishing early is fine.
- Tuesday, Nov. 24 or Wednesday, Nov. 25: If you chose a fresh turkey, buy it now. The USDA says to buy a fresh bird only one to two days before cooking.
- Wednesday, Nov. 25: Prep what you can. Chill wet stuffing ingredients separately from dry ones and combine them just before cooking. The USDA recommends cooking stuffing in a casserole outside the bird.
Thursday, Nov. 26
Set the oven no lower than 325°F. Cook the turkey to 165°F, checked in the innermost part of the thigh and wing and the thickest part of the breast; any stuffing must reach 165°F at its center too. Let the turkey stand 20 minutes before carving. A turkey cooked from frozen takes at least 50% longer.
| Turkey weight | Unstuffed at 325°F | Stuffed at 325°F |
|---|---|---|
| 8 to 12 lb | 2¾ to 3 h | 3 to 3½ h |
| 12 to 14 lb | 3 to 3¾ h | 3½ to 4 h |
| 14 to 18 lb | 3¾ to 4¼ h | 4 to 4¼ h |
| 18 to 20 lb | 4¼ to 4½ h | 4¼ to 4¾ h |
| 20 to 24 lb | 4½ to 5 h | 4¾ to 5¼ h |
To time a 2 p.m. dinner with a 15-pound unstuffed turkey, work backward: allow the longer 4¼ hours of roasting plus the 20-minute rest, so the bird goes in around 9:25 a.m. That example is our arithmetic from the USDA times; a thermometer, not the clock, tells you when it is done.
Friday to Monday: leftovers
Refrigerate leftovers within two hours of serving, in shallow containers, the USDA says. Discard anything left at room temperature for more than two hours, or one hour if the room is above 90°F. Use refrigerated leftovers within 3 to 4 days, which lands between Sunday, Nov. 29 and Monday, Nov. 30. Freeze what is left for longer; quality is best within 2 to 6 months. Reheat leftovers to 165°F.
Thursday, Nov. 26 is a postal holiday, so post offices are closed and there is no regular mail delivery, the U.S. Postal Service says. Black Friday follows on Friday, Nov. 27; our Black Friday 2026 ad tracker lists which sale dates are confirmed.
Kitchen fire safety
Thanksgiving is the peak day for home cooking fires. The U.S. Fire Administration (USFA), part of the Federal Emergency Management Agency (FEMA), counts about 2,300 residential building fires on Thanksgiving Day each year, roughly 2.3 times the daily average, with cooking the cause in 74% of them, based on 2017 to 2019 data. Stay in the kitchen while cooking on the stovetop, keep anything flammable away from the burners and keep children and pets at a distance.
What dinner costs
The American Farm Bureau Federation (AFBF) priced a classic Thanksgiving dinner for 10 at $55.18 in 2025, or $5.52 per person, down 5% from $58.08 in 2024. A 16-pound turkey averaged $21.50, about $1.34 per pound. The farm bureau usually releases its new survey in mid-November, so the 2026 figure is not yet available; the numbers here are from 2025.
