Thanksgiving Day in the United States is Thursday, Nov. 26, 2026, and a 16 to 20 pound frozen turkey should go into the refrigerator around Nov. 21 or 22. The U.S. Department of Agriculture (USDA) says to allow about 24 hours of thawing for every 4 to 5 pounds in a refrigerator set at 40°F (4°C) or below. The Centers for Disease Control and Prevention (CDC) gives the same rule of thumb.
The chart below turns those weight ranges into start dates for Thanksgiving on Nov. 26. Treat the dates as planning estimates. A larger bird or a refrigerator that runs warm can need more time.
When to take your turkey out of the freezer
| Turkey weight | Refrigerator thawing time (USDA) | Start thawing for dinner on Nov. 26 |
|---|---|---|
| 4 to 12 lb (1.8 to 5.4 kg) | 1 to 3 days | Nov. 23 to 25 |
| 12 to 16 lb (5.4 to 7.3 kg) | 3 to 4 days | Nov. 22 to 23 |
| 16 to 20 lb (7.3 to 9.1 kg) | 4 to 5 days | Nov. 21 to 22 |
| 20 to 24 lb (9.1 to 10.9 kg) | 5 to 6 days | Nov. 20 to 21 |
The start dates are our arithmetic, counting back from Thursday, Nov. 26. Starting at the early end of each range leaves room for a slow thaw.
Keep the turkey in its original wrapping and set it on a tray or in a pan on the lowest shelf, so raw juices cannot drip onto other food.
How long can a thawed turkey wait?
A turkey thawed in the refrigerator can stay there for 1 to 2 more days before cooking, according to both the USDA and the CDC. That is why finishing a day early is not a problem. A turkey thawed by the cold-water or microwave method is different and must be cooked right away.
Forgot to thaw the turkey? Two faster methods
Cold water
The CDC and USDA allow about 30 minutes per pound. Put the turkey in a leakproof bag, cover it fully with cold tap water and change the water every 30 minutes. Never use warm or hot water. Cook the turkey immediately after it thaws.
| Turkey weight | Cold-water thawing time (30 minutes per pound) |
|---|---|
| 4 to 12 lb | 2 to 6 hours |
| 12 to 16 lb | 6 to 8 hours |
| 16 to 20 lb | 8 to 10 hours |
| 20 to 24 lb | 10 to 12 hours |
The hour ranges are calculated from the 30-minute-per-pound rule. Plan on more time if the turkey is not fully submerged or the water warms up.
Microwave
A small turkey or a turkey breast may fit in a microwave. Follow the manufacturer’s defrost directions and cook the turkey immediately afterward. Most whole turkeys are too big for this method.
Never thaw a turkey on the counter
The CDC warns against thawing a turkey on the kitchen counter. If a turkey sits out for more than two hours, its temperature becomes unsafe even when the center is still frozen. Germs can grow rapidly in the “danger zone” between 40°F and 140°F (4°C and 60°C).

What temperature should a cooked turkey reach?
Use a food thermometer, not color or a pop-up timer. The CDC says the turkey must reach 165°F (74°C), measured while avoiding bone, in the thickest part of the breast, where the body meets the thigh and where the body meets the wing. Stuffing cooked inside the bird must also reach 165°F at its center.
